Ingredients You’ll Need
Strawberry Cake Batter:
1 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
1 cup unsalted butter
1 cup granulated sugar
4 large eggs, room temperature
1 teaspoon vanilla extract
1 cup whole milk
Strawberry Cake Filling Ingredients:
2 cups fresh strawberries
½ cup granulated sugar
1 tablespoon cornstarch
Frosting Ingredients:
8 ounces of fresh cream cheese
1 cup unsalted butter
3/4 cups powdered sugar
1 teaspoon vanilla extract
1 cup of heavy whipping cream
Fresh strawberries for decoration (about 5-7 small berries)
Making the Strawberry Cake
Preheat your oven at 350˚F.
While your oven is preheating, get a 9-inch round cake pan ready. Grease and flour them a little so the cake doesn't stick on it.
In the bowl of an electric mixer, beat 4 eggs and 1 cup of granulated sugar on high speed until the mixture becomes light and fluffy and triples in volume.
Now sift flour onto the mixture, also add 1 tablespoon of baking powder and gently fold it in well using a spatula. Scrape the bowl's bottom to prevent flour pockets from forming.
Transfer all the contents of the bowl into that 9 inch cake pan. For best results, line the pan with a parchment paper before pouring the mixture, it will prevent it from overbrowning.
Bake the cake for about 20 minutes or until the top becomes golden. Hit it lightly with a butter knife, if it springs back, the cake is ready.
To loosen it, carefully work a thin-edged spatula around the sides. Allow the cake to completely cool before removing the parchment paper.
Strawberry Cake Filling
While your cake is cooling, take 2 cups of fresh strawberries, hull and slice them into halves. Toss them into the food processor and pulse them 10-15 times, or until it becomes a thick strawberry puree.
Then pour the thick mixture into a saucepan and place it on the stove. Simmer the mixture for 8 to 10 minutes on medium heat, or until it reduces to 1½ cups. This will further thicken the puree while enhancing the strawberry flavor.
Assembling the Cake Layers
Cut it in half once it gets cooled and place it on a serving dish. Pour some of the strawberry puree over the top and spread it all over its surface evenly, up to the edges.
Take the second half of the cake and put it on top of the cake with strawberry filling. Press down gently to ensure the layers stick together nicely.
Do the same for the remaining halves, spread the filling on the second layer and then place the third cake layer over it and so on.
Frosting the Cake

Beat the softened cream cheese and butter together in a large empty bowl until they get nice and smooth. Gradually add ¾ cup of powdered sugar, mixing in one cup at a time. After that, add 1 cup of heavy whipping cream and continue beating until the frosting becomes light and fluffy. Mix in one tablespoon of vanilla extract to enhance its flavor and aroma.

Frost the cake
Cover the whole cake in a thin layer of frosting, using an offset spatula. This will trap any loose crumbs. After that let it cool for a bit and then spread the thick layer of frosting over it, covering the top and sides evenly.
